New Arcadia Restaurants to Watch This Summer

Old Town Scottsdale is getting a rooftop wave this summer. National operators, valet lines, new hotel decks. Arcadia is doing something different. Every restaurant opening or reopening within a fifteen minute walk of 40th Street and Camelback this season is being run by someone who was already an Arcadia insider, and almost every one of them is taking over a space the neighborhood already knew by name.

That pattern is the story. The list of new places is just the evidence.

The May 18 Pivot At 40th And Camelback

The Gadzooks at 4031 E. Camelback closed after service on November 8, 2025. In its place, on May 18, 2026, Aaron and Jared Pool opened Poolboy Taco, the newest concept from the Poolhouse Group team behind Gadzooks and The Green Woodpecker, in the former Gadzooks space at 40th Street and Camelback Road. Same corner, same operator, new concept.

The building is 2,100 square feet and seats about 50. The Pools brought in local firm House of Form to redo the interior with terrazzo floors, pastel neon, brass, and cabana banquettes. The design brief is a specific one: 1950s quick-service diner crossed with poolside cabana, aimed at a tab that stays close to ten dollars. Pool said the goal of Poolboy Taco is to be comparable to a typical fast-food restaurant in speed of preparation and in affordability, with tacos ranging from $3 to $4.

The menu is built around a taco Aaron Pool invented in 2014 for Phoenix's Taco Fest. It runs on a 50/50 corn and flour tortilla, tomatillo chicken, jalapeño ranch, honey vinaigrette slaw, cotija, and a slab of sweet-and-spicy cornbread that acts more like a custard than a bread. The rest of the menu builds outward from that: breakfast tacos, a wagyu build, a portobello, enchiladas, nachos, frozen margaritas served in 22-ounce collectible cups.

The move worth watching is not the menu. It is the choice. When the Central Avenue location the Pools had lined up for Poolboy fell through, they did not go looking for a new neighborhood. They closed one of their own Arcadia restaurants and used the shell. The staff was reassigned inside the group during the remodel rather than let go. That is a specific bet on this specific corner.

The Space That Is Not Closing, It Is Transforming

Two miles west, at 3603 E. Indian School Road, the same pattern is playing out on a different timeline. Jennifer Russo ran The Market by Jennifer's in Gaslight Square for eleven years. On September 4, 2025, she ended daily restaurant service. She did not sell the lease. She did not walk away from the block.

She is turning the room into Hornbill, a Singapore-inspired cocktail lounge and small-plates restaurant, in partnership with cocktail pro Jason Asher of Juniper & Jigger Hospitality Co. Asher's résumé in Phoenix includes UnderTow, Platform 18, and Century Grand. The architect on the space is Wesley James, whose recent work includes Tropic Thunder in downtown Phoenix. The design direction leans into 1970s fern-bar comfort with tropical plants inside and out.

The original announcement pointed to an early 2026 opening. That has moved. Phoenix New Times' most-anticipated list now places Hornbill as a summer opening at 3603 E. Indian School Road, which puts a soft-launch window somewhere between the tail end of the season and early fall. If you have wondered why the Market's patio has been quiet since last September, this is why.

Two operators. Two of the busiest Arcadia street corners. Both choosing to renovate rather than relocate.

The September Slot On Indian School

The third leg of the summer arrives about a mile east. Arcadia Pizza Company, from owner Joe Stubbe, is building out the space at 3122 E. Indian School Road. The team is targeting a late summer or early September debut for the neighborhood pizzeria, and the concept will focus on Midwest-inspired pizza styles, including Chicago-inspired tavern-style pies and Detroit-inspired square pizzas.

Two things about that. First, tavern-style and Detroit are not the styles Phoenix pizza has been arguing about lately. This is not another wood-fired Neapolitan. Second, the location is a stretch of Indian School Road that has been slowly turning into a restaurant row without a single anchor announcement to point to. Hornbill will be a few blocks west when it opens. The Original Arcadia Tavern is a few blocks east. Arcadia Pizza Company slots between them.

The Openings That Already Landed

The summer is easier to read against the previous twelve months, which have been the busiest stretch in Arcadia dining in memory:

Look at the operator column. Bernie Kantak runs Citizen Public House and The Gladly, both Phoenix institutions. Aaron Pool already had two restaurants in Arcadia before Poolboy. Jennifer Russo has been on that block of Indian School for eleven years. Kevin Ehret grew up in the neighborhood. "My whole life is like a two-mile radius. I literally grew up here, and now my son goes to school down the street. We live close by, so to find a restaurant space in this neighborhood and location that I grew up in and live in now is pretty wild," Ehret says about Neutral Ground Lounge at 4602 E. Thomas.

That is not the operator mix that produces a tourist wave. It is the operator mix that produces a neighborhood.

What The Pattern Actually Means For Someone Who Lives Here

The practical read for an Arcadia resident is that the summer's restaurant news does not require any real driving. The four addresses that matter most this season sit on a rough triangle: 32nd and Indian School, 40th and Camelback, 44th and Camelback, and the stretch of Indian School between 32nd and Arcadia High School. If you already walk your neighborhood in the evening, you are walking past three of the four rooms without changing your route.

The second read is a scheduling one. Poolboy Taco opened in the summer window, which means the first six to eight weeks are the ones where a walk-up at 6:30 p.m. still works. By the time the winter arrivals come back to Phoenix, that table is a wait. The same math will apply to Hornbill the week it opens and to Arcadia Pizza Company in September. The residents who show up first do not need reservations. The residents who show up in November do.

The third read is the most durable. Arcadia is behaving like a neighborhood whose best operators keep choosing to stay in it. The two most talked-about openings of the year, Poolboy and Hornbill, are both existing Arcadia operators renovating existing Arcadia shells. That is a different signal than a national chain picking a zip code off a spreadsheet. It is the operators who have watched this neighborhood eat for a decade betting that the next decade will be worth the buildout.

That was the read in January. Six months later, Poolboy has landed, Hornbill is close, and Arcadia Pizza Company is next. The list has grown. The pattern has not changed.

A Short Field Guide For The Next Ninety Days

• If you want to try Poolboy without a wait, go on a weekday before 6 p.m. through the end of August. Word of mouth is still ahead of the tour buses.
• If you want a table at Hornbill the first week it opens, watch Juniper & Jigger's channels for the announcement. Russo's catering list is the other early signal.
• If you are the person in your friend group who books September dinners now, put Arcadia Pizza Company on the shortlist. Chicago tavern-style is a style Phoenix has not had a serious room for.
• If you have not been back to 4602 E. Thomas since Neutral Ground Lounge opened in January, the small-plates menu has turned over twice with the seasons. It is not the same room it was in February.
• If you have out-of-town guests in July, Minnow's touchscreen sushi counter at 4501 N. 32nd is the fastest way to explain why Arcadia is having the year it is having.
